Actualment ens trobem en moment de canvi, la crisi ecològica, econòmica i social ens està fent replantejar si el sistema productiu i de consum que hem implementat al llarg del segle XX és sostenible. La nostra sobirania alimentària es troba en un estat delicat, submergida en un sistema global, on els petits productors han anat desapareixent i on la majoria de la població compra en grans centres comercials que fan negoci amb productes de llarg recorregut, fora de temporada, amb enormes externalitats a nivell mediambiental i inflats de preu per la quantitat d’intermediaris entre el productor i el consumidor final, trencant així el nostre lligam amb l’entorn i perdent, a poc a poc, les tradicions culinàries que el garantien.
L’aspecte més negatiu del sector alimentari és la descompensació que hi ha entre l’excés de productes carnis (tan en el consum com en la producció, en relació al que necessitem com a espècie per al nostre clima i latitud) i el de cereals, i en menor escala de llegums, elements que haurien de ser bàsics en la nostra dieta (cereals 50-60% i llegums 10-15%). A nivell d’autosuficiència els resultats productius de la carn i els cereals verifiquen aquesta descompensació, amb resultats tan allunyats com un elevadíssim 3.177% en el cas de la carn i un escàs 5,2% en el dels cereals.
El sector ecològic Català es troba en clar creixement i amb bones expectatives, com a punts forts hi trobem la venda en circuit curt o directa i que respecten els estàndards de l’”slow food” i del “km 0”, per altra banda la poca cohesió del sector (amb poca connexió territorial entre diferents productors) és un problema, juntament amb l’alimentació del bestiar, sovint amb grans
recorreguts i el baix ús (25%) del cultiu de cereal per a alimentació humana. |

We are currently in times of change, economic, social and ecological crises are making us rethink whether the system of production and consumption that we have implemented over the course of the twentieth century is sustainable. Our food sovereignty is in a delicate state, submerged in a global system, where small producers have disappeared and where most people buy in large malls that do business with long-distance and off-seasoned products, with huge
environmental externalities at inflated prices by the amount of intermediaries between the producer and the consumer, breaking our links with the environment and slowly losing, the culinary traditions that guaranteed it.
The most negative aspect of the food industry is the imbalance between excessive meat products (from a consumption and a productive point of view) and cereals and legumes on a smaller scale, the basic elements that should be in our diet (cereals 50-60% and legumes 10-15%). In a self-sufficiency level, the results in meat production and cereals verify this imbalance, with results as far as a very high 3.177% in the case of meat and a low 5.2% in cereals.
The organic Catalan sector is clearly growing with good expectations, as strong points we find the short circuit or direct sale, respected by "slow food" and "km 0" standards, otherwise the low cohesion in the sector (with a low territorial connection between different producers) is a problem along with cattle feed, often with major routes and low use (25%) of cereal crops for
human consumption. |
