The International Congress of Meat Science and Technology (ICoMST) is the leading international congress in the field of Meat Science and Technology, held annually. In 2025, the 71st Edition of the Congress was held in Girona, Spain (Fig. 1), from 3rd to 8th of August, bringing together around 500 participants from over 40 countries. The congress offers a broad perspective, encompassing topics that span the entire meat production chain, from farm to fork. The topics were organized into eight main categories, allowing for a comprehensive exploration of the sector's most relevant scientific, technological, and societal issues: Traditional meat products and innovative trends, sustainability in meat production (including packaging), animal welfare and meat quality, carcass quality and innovation in abattoirs, emerging technologies in meat processing, muscle biology and biochemistry (including omics), safety and quality, society and consumers and, nutrition and health.
